We sell it to you, just like we sell it to our family and close friends - by "hanging weight" at the butcher.
So...you end up paying us for the meat, and also paying the butcher when you pick it up. That's just like sets of our parents and our siblings do it.
If you've never got a quarter before, and are unsure of how you want it butchered - our butcher, Brookview Meats in Archbold, are expert at asking you the right questions for a perfect package. Our first time, I found it fun! Now we make just small changes year to year - a little more stew beef, more rib-eyes instead of cutting huge porterhouse steaks, etc.
We require $100 ernest money that protects us from loosing money from folks pulling out at the last minute. If we have to sell your quarter at a discount because you pulled out a day before it gets butchered, don't expect it back. If you kindly mention you're in a pinch early enough, and we can find another buyer, we'll be happy to give it back and help you in your time of need.
